So we made caramel apples with our friend Allison not too long ago and they were amazing! Since I ate so much caramel before the apples were even done, I couldn't finish my whole apple. Anyways, Allison came with the caramel recipe so we are going to share that with you and show you how we made the apples.
You will need:
1/2 cup butter
2 cups packed brown sugar
1 cup light corn syrup
a dash of salt
1 14 oz. can of sweetened condensed milk
1 tsp vanilla extract
apples, washed and dry
popsicle sticks or twigs or in our case, tongue depressors
chopped nuts or sea salt or both
Shove a popsicle stick down into the middle of the apple.
Sand the apples. We couldn't decide if this step was totally necessary. If you don't have sand paper, don't worry about this step.
Melt the butter in a pan.
Add brown sugar, corn syrup and salt.
Stir it up real good.
Stir over medium heat until it starts to boil.
Stir in sweetened condensed milk.
Stir until your candy thermometer reads 248 degrees. We didn't have one of these so Allison dropped a bit of caramel into a cup of cold water. When the caramel forms a firm ball in the water, it is finished!
Roll your apple in the caramel until it is covered and immediately roll in nuts or salt or nothing.
Set the apples on greased wax paper for cooling. Make sure you grease it or you will be eating the wax paper that refuses to come off of your apple.
We ate the left over caramel with the salt right on a spoon. We just couldn't wait for the apples to cool. Do the salt! It's soooooo gooooood!
