recipe: watermelon rosemary agua fresca

We bought a watermelon to make fresh watermelon jello for our Fourth of July party and we had more than half of the watermelon left over. In order to not be wasteful, we ended up making a lot of watermelon things. All the recipes were all delicious and summery and now we are sharing one of them with you! This drink is so refreshing. You could add club soda for a little spritz or some rum or vodka for a more adult drink. But, this is also so perfect just the way it is.
Watermelon Rosemary Agua Fresca
Ingredients:
- 5 cups Watermelon Juice
- 1/2 cup Rosemary Simple Syrup
- 3 Tbs. Lime Juice

Directions:
For the watermelon juice-
1. Blend watermelon in a blender.
2. Strain the watermelon to remove all seeds and pulp.

For the Rosemary simple syrup-
1. Heat 3 sprigs rosemary, 1 cup water and 1 cup sugar to medium-high heat.
2. When sugar has dissolved, simmer for about 15 minutes.
3. Remove rosemary.

For the drink-
1. Mix all ingredients together in a pitcher and serve over ice!

I hope you all get to try this at some point this summer. I'm not the biggest fan of eating straight watermelon, but this takes watermelon to another level. Can we please have a pitcher of this in the refrigerator at all times? Please, and thank you.
